Need a little bit of chocolate?

We’re hosting a dinner party tonight at Avila House and naturally, that got me thinking about food. I wanted to share this house favourite that is delicious and easy to make if you’ve got a slow cooker. So whip yourself up some chocolate-y goodness this week! Lent is just around the corner, after all..

Choco-PB cake

Fudgy PB & Chocolate Cake

  • 1/3 cup milk
  • ¼ cup of peanut butter
  • 1 tablespoon of canola or coconut oil
  • ½ teaspoon of vanilla extract
  • ¾ cup sugar, divided
  • ½ cup all-purpose flour
  • ¾ teaspoon baking powder
  • 2 tablespoons baking cocoa
  • 1 cup of boiling water

In a large bowl, mix the milk, peanut butter, oil, and vanilla and beat until blended.

In a smaller bowl, combine ¼ cup sugar, the flour, and the baking powder and slowly beat these dry ingredients into the large bowl with the peanut butter mixture. Once smooth, pour this into a greased slow cooker.

In a small bowl, combine the cocoa and the rest of the sugar; stir in the boiling water. Pour this into the slow cooker but do not stir.

Cover and cook on high for 1 ½ to 2 hours or until fully cooked.

Serve topped with vanilla ice cream.
